Nigella’s Lemon and Raspberry Muffins

Ok, Mr. Lacer suggested calling this post Nigella’s muffins but he’s got a smutty mind.

Anyway I’ve got a bit of a glut of lemons at the moment, not because (I wish) I live in some hot and sunny lemon producing climate but because I needed to buy an unwaxed lemon for my pancake dish the other day and I can only find bags of unwaxed lemons as opposed to singular ones. And trying to be mindful about not wasting food for economic and environmental reasons, I thought I’d have a go at some lemon baking (to be honest generally if I need just lemon juice for something I use the bottled stuff, I only buy lemons for their zest) and anyway it’s going to be quite a lot of lemon baking as there’s quite a lot of lemons. Anyway today’s baking was Lemon and Raspberry Muffins, using all ingredients I had already in the kitchen (I had some frozen raspberries in the freezer left over from making my apple and raspberry pie). The recipe was from Nigella Lawson’s How to Be a Domestic Goddess, I love that book, I cook from it regularly but there’s still so many gorgeous looking recipes to try even all these years later. Anyway, this recipe was easy to make and the result delicious, I was a little worried it wouldn’t be that lemony but the lemon really shone through and complemented the raspberries perfectly, so possibly a recipe a little too flavourful for kids, my two weren’t overly keen on these but that means more for me and Mr. Lacer!

So the next question is, what lemon recipe next? Consulting the fabulous recipe index on Nigella.com, which is very useful for people like me who have all her books and a memory like a sieve about which recipe is where, I think I may be  tempted by the lemon cupcakes from Forever Summer, I will report back . . .
