I am officially full up, stuffed to the gills, today’s ‘posh’ breakfast was breakfast crumpets from the Hungry? Innocent cook book. It’s crumpets dipped in a beaten egg (one was just about enough for six) and fried on both sides with a little butter till brown and then topped with honey and more squashed berries. I made the kids’ crumpets first and it was so satisfying, as I was cooking mine and Mr. Lacer’s, hearing Boy Lacer (who can be so fussy about food) literally going “nom, nom, nom,” and both kids returning with literally licked clean plates, with Girl Lacer hanging around like a vulture so she can pinch a bit of mine.
Anyway, I thought it equally delicious and definitely an improvement on normal crumpets, which for me are always a case of the idea being nicer than the reality (I think crumpets can be a bit too flabby sometimes and the bottom too burnt). So I will definitely be making crumpets this way again!

You should try making your own crumpets from scratch as they are so much softer than storebought ones. I haven’t dipped and fried before but will definitely try now!
