Courgette Cake


I broke my cooking rut this evening (and used up some courgettes from the allotment to) by making courgette cake from Nigella Lawson’s How to be a Domestic Goddess and it was absolutely delicious. The cake itself is moist and although I’m normally not a big fan of icing, the lime curd filling and the lime cream cheese topping totally complimented the cake.

The cake is also incredibly easy to make (and not too unhealthy).

  1. Did you make the lime curd ? Must admit that the extra step of making the lime curd is why I haven’t done this yet…I have a grand total of two courgettes in my back garden at the moment…

    1. No, I was making this about 9 o’clock at night, making the lime curd was a step too far (and Sainsburys own brand lime curd isn’t bad).

      Think this has to be the best cake I’ve made in ages, me and the husband love it BUT both kids hate it (I think it’s the lime, although they’ve been guzzling lime squash all week), so not sure if I’ll be making it again unfortunately, making cake that just two people are going to eat seems a bit much.
