Christmas Cake



This year’s Christmas cake was made very last minute from a discounted Delia Smith ready to make kit from Waitrose. After last year’s disgusting shop bought cake I had to do something but my Christmas cooking has been in total disarray, so the kit, although taking quite a lot of the magic out of the whole process, was at least better than that.

Anyway the process was so quick I had, ummm, neglected to properly line the tin, so it stuck in the tin and then because I was dashing between three million different things, I left the cake on a plate and not a cooling rack, so consequently it stuck on the plate to (and is still on the same said plate).

Anyway, despite an extremely rough surface (only partially hidden by the icing), the resulting cake is actually quite nice, not as nice as my Nigella favourite but way better than the shop cake that ended up in the bin after only one slice last year.
