Anzac Biscuits

Anzac biscuits from Love, Bake, Nourish, perhaps not the best biscuit to bake for two eight year old boys on a play date, as being from Love, Bake, Nourish, they’re about as sweet as ummm my hat. A mix of oats, spelt flour, desiccated coconut, honey, butter and what was meant to be dried blueberries (looked everywhere, couldn’t find them), so was instead chopped up dried apricot. The result is ….. very healthy. They’re ok, Boy Lacer ate them but he eats anything (bar coffee cake and the flapjack the kids get everything break time in Juniors) but they do have more than a passing resemblance to saw dust. Just eating one makes you gasp for a glass of water. I think they would have been better with the dried blueberries, as there wasn’t that much apricot and it was the bits with apricots actually in that were the nicest.
