Mixed up muffins from Baked in America and they truly are mixed up. A mixture of plain and wholemeal flour, with added cornmeal and oats plus dried apricots, they masquerade as being healthy, without actually being healthy, as they have a ton of butter and sugar in them (thanks for the tip about storing butter for baking in the freezer P.!). However unfortunately even with the ton of butter and sugar in them, they do taste pretty healthy, ie all the calories without the fun bit. Also, even with all the different flours etc. in them, the resulting muffin is surprisingly homogenous and consequently a bit dull. And I think the cooking times were wrong (which is why they look a bit burnt). Sigh, I’ve been having muffin cravings but these won’t do it for me.
