On the menu: Apple fruit cake

This was lovely, okay it’s a bit like Christmas cake (and could make a very good one, if you so wished) but as I’m thinking of making a different sort of Christmas cake this year, it’s allowed. The cake is less dense than traditional Christmas cake and has a really nice soft, crumbly texture but it’s got mixed spice in, so you’re not too far away from Christmas. The cake, as the recipe title suggests, has apple in (grated) but you can’t taste it at all but I think it goes along way to explaining the aforementioned lovely texture.
